Question What does "100% Pure Raw Honey " really mean?

Answers If you have not tasted pure raw honey you are in for a real treat. It is a far cry from store-bought honey. 100% Pure Raw Honey means that the honey extracted from the hive has not been blended with other honeys or syrups, it has not been pasteurized, has not been filtered, or changed in any way other than re-packaging in Mason jars.

Question There's a "something" floating in my honey. What's in there?

Answers Unfiltered, raw honey can have wax, propolis, pollen, and yes maybe even a bee wing. Everything will eventually float to the top of the jar. Be assured that there is no bacteria. Some folks welcome the added nutrients in propolis and pollen while others skim it off.

Question Why is "un-pasteurized" important?

Answers Pasteurizing is a necessary process to kill bacteria in food products. In the case of milk, pasteurizing is a good practice. Honey is naturally anti-bacterial and does not spoil. Honey from the grocery store shelf has been pasteurized. It has been heated to a temperature of 181 degrees for 24 - 48 hours. All of the nutrients natural to honey have been destroyed.

Question I love the mason jar. My mother warned me about the pop up seal and that it should be "down". I have a jar of honey but the seal on the mason jar is popped up. What's up with that?

Answers Your mother is correct - about canning preserves. Preserves are heated to a high temperature to kill any bacteria and then put in the mason jar. As the jar cools, the mason jar lid is sucked into the "down" position to create an air tight seal. Our honey is not heated so this cannot happen. We use Mason jars because it symbolizes homemade American goodness and tradition.

Question Will honey spoil or go bad?

Answers No. Honey does not spoil. Honey is a natural anti-bacterial agent.

Question Should honey be refrigerated?

Answers No. Refrigeration of honey is not necessary. You honey will never "go bad".

Question My honey has crystallized in the jar. Is there something wrong with it?

Answers There is nothing wrong with your honey. Crystallization or "sugaring" (because it looks like sugar) is a natural aging process. Some honey types will crystallize very quickly and others may never crystallize.
To "clear" your honey of crystals, place the jar in pan of water. Warm to about 120 degrees and stir with a fork until clear.

Question I like to mix crystallized honey and butter to keep in the refrigerator. Do you sell pre crystallized honey?

Answers Yes, Crystallized honey is available by special request.

Question What if I order some honey and I don't like it? Can I send it back?

Answers Real raw honey can be different than you might expect if you are used to commercial honey. Commercial honey is a blend of many honeys and even corn syrup. It's filtered and pasteurized and mostly just tastes sweet. Each of our flavors are very different. The aroma and flavor will certainly make an impression. There are no refunds, returns, or credits. Our only guarantee is that our honey is exactly as stated - 100 % Pure Raw Honey direct from the bees. If you don't care for a particular flavor, do your friends a favor and share.

Question I notice that you post the "Vintage" on the label. Is this important?

Answers We think so. Our customers have noted that honey harvested from the same locations but at different times can have very different flavors. This is caused by many factors. In the case of wildflower, it depends on what surrounding crops are in bloom and can be a very noticeable season to season. Orange blossom will be more consistent as the hives are placed deep in the groves and there are fewer bloom sources other than orange.
