from store-bought honey. 100% Pure Raw Honey means that the honey extracted
from the hive has not been blended with other honeys or syrups, it has not been
pasteurized, has not been filtered, or changed in any way other than
re-packaging in Mason jars. |

even a bee wing. Everything will eventually float to the top of the jar. Be

is "un-pasteurized" important? |

Pasteurizing is a necessary process to kill bacteria in food
products. In the case of milk, pasteurizing is a good practice. Honey is
naturally anti-bacterial and does not spoil. Honey from the grocery store shelf
has been pasteurized. It has been heated to a temperature of 181 degrees for 24
- 48 hours. All of the nutrients natural to honey have been destroyed. |

should be "down". I have a jar of honey but the seal on the mason jar is popped
up. What's up with that? |

Your
mother is correct - about canning preserves. Preserves are heated to a high
temperature to kill any bacteria and then put in the mason jar. As the jar
cools, the mason jar lid is sucked into the "down" position to create an air
tight seal. Our honey is not heated so this cannot happen. We use Mason jars
because it symbolizes homemade American goodness and tradition. |

is nothing wrong with your honey. Crystallization or "sugaring" (because it
looks like sugar) is a natural aging process. Some honey types will crystallize
very quickly and others may never crystallize. To "clear" your honey of
crystals, place the jar in pan of water. Warm to about 120 degrees and stir
with a fork until clear. |

think so. Our customers have noted that honey harvested from the same locations
but at different times can have very different flavors. This is caused by many
factors. In the case of wildflower, it depends on what surrounding crops are in
bloom and can be a very noticeable season to season. Orange blossom will be
more consistent as the hives are placed deep in the groves and there are fewer
bloom sources other than orange. For those REALLY into this, we provide GPS
locations of the area of harvest. With this information, it is possible to find
other web sites that can use the data to show you satellite photos of the area
and even show infra-red data about the agriculture of that area. All of this
info is printed on the jar of honey but you should check our site for current
updates. |
