Wildflower is a continuously changing crop and we enjoy the taste evolution in the gathered honey throughout the year. The bees are given a smorgasbord of flowers from which the nectar is retrieved. We are offering two separate crops. Lake County and Merrit Island wild flower. Merrit Island honey aroma is very floral. These wild flowers make a complex and rich flavor that should be included in holiday sauce and glazes.
The honey is creamy smooth in texture and has a pleasant tartness that keeps the sweetness in check with a tangy finish. Lake County honey is a thick darker amber colored honey is dense with the crystalline graininess common to clovers and other field flower honeys. In order to provide honey that is considered local to an area, we keep our wild flower harvests separated and never blended.
